Sugar refers exclusively to the sucrose extracted from sugar cane and sugar beet, which are crushed to produce juice, and refined into crystalline form. The raw crystals are further refined to produce the pure white sugar more commonly used in food preparation. Brazil and India are the world’s two largest sugar producers from sugar cane, with the European Union the largest sugar producer from sugar beet. M.I.S.
